Red Onion Marmalade
Red Onion Marmalade
This recipe can be made in advance and used whenever you are serving bangers and mash, cold meats, homemade pizzas or just with cheese and biscuits.
You can even spread it on the pizza as a topping.
50g butter;
450g red onions, peeled and sliced;
One tbsp light brown sugar;
Finely grated rind of 1 orange;
250ml red wine;
55ml red wine vinegar;
Two tbsp cassis, optional;
Salt and freshly ground black pepper;
Method
Melt the butter in a pan, add the onions and sugar and cook over medium heat for about 10-15 minutes stirring occasionally until soft and slightly caramelised.
Add the orange rind, red wine, red wine vinegar and cassis and leave to cook for a further 10 minutes or until all the liquid has evaporated and the onions are very soft.
Season and keep until ready to use.
