Clare Latimer's recipe for
Quick cupcakes
Quick cupcakes
Delia makes cupcakes with frozen mashed potato. I prefer to stick to the traditional way and just get the flour out of the cupboard.
Remember to buy the paper cups!
Ingredients
Makes 12 cakes
2 large free range eggs
1 tsp vanilla essence
125g caster sugar
125g butter, soft
125g self-raising flour
To decorate
1 jar Nutella
Few Smarties or your choice to decorate.
Method
Heat the oven to 180C/ 350F/gas 4.
Put all the ingredients in a bowl and beat them together until the mixture is smooth and slightly lighter in colour.
Line the cupcake tins with paper cases and half-fill each case with the cake mixture.
Cook the cakes for 15-20 minutes. You can tell they are done when they have risen and are light golden in colour.
Leave to cool and then spread with a layer of Nutella and decorate with Smarties or perhaps some baby marshmallows.
Store in a tin.
