Nutty flapjacks
Nutty flapjacks
These are delicious and perfect dunked into coffee. They keep for at least a week in a tin.
Ingredients
Makes about 8-12
200g unsalted butter
200g demerara sugar
200g golden syrup or honey
400g porridge oats
2 desp desiccated coconut
1 desp peanut butter
6 sticky dates, chopped.
Method
Preheat oven to 180C/ 350F/gas 4. Butter a 20cm x 30cm baking tin.
Heat the butter, sugar and golden syrup or honey in a saucepan, stirring occasionally until the butter has melted and the sugar has dissolved. Add the oats, coconut, peanut butter and dates and mix well.
Transfer into the cake tin and spread to about 2cm thick. Smooth with the back of a spoon. Bake for 15-20 minutes until lightly golden around the edges but still slightly soft in the middle.
Cool in the tin, marking the squares with a knife, then turn out and cut into pieces.
