Waldorf style salad
Waldorf style salad
This is a lovely crunchy fresh salad and the ingredients keep well in the fridge until chopped.
You can make this into a complete light supper dish by adding crumbled Stilton cheese or any other hard cheese that may be left over and serving it along side a wholesome bowl of soup.
Ingredients
Serves 8
225g chicory, sliced in 15mm slices;
Two large red dessert apples, cored and cut into bite-sized pieces;
Four sticks celery, strings removed, washed and chopped;
One large orange, skin cut off and then segmented and each segment halved;
125g pecan nuts, chopped;
Four tbsp mayonnaise;
Salt and freshly ground black pepper.
Method
Put all the ingredients into a salad bowl, mix well and serve.
