Russian Doll Chicken

Russian Doll Chicken
This is a great combination of flavours but be careful not to overcook the breasts as they will not be so succulent and tender.

Ingredients
Serves 4
Four free-range British chicken breasts;
125g Gorgonzola cheese;
225g fresh spinach leaves, blanched and drained well;
Freshly ground black pepper;
Four slices Parma ham;
Eight sheets Filo pastry;
50g butter, melted.

Method
Preheat the oven 190°C 375°F Gas Mark 5. Lay open the chicken breast to reveal the small flap, or cut a small flap, and stuff each one with a quarter of the cheese.
Place some of the spinach on each piece of cheese, season with pepper and close up each breast.
Wrap each breast with the Parma ham. Unfold the filo pasty and brush two sheets with the melted butter.
Place one sheet on top of the other, wrap up a chicken breast like a parcel, then brush again on the outside with the butter.
Place on a baking tray and repeat with the other three breasts. Bake for 30 minutes or until the pastry is golden brown. Serve immediately.
