Knotweed crumble

• I WAS dismayed at the criticism of those who forage on Hampstead Heath (Foragers “cashing in” on the Heath, November 18).

Commercial foraging can be destructive, but those of us who forage responsibly are not damaging the Heath. 

I have been a member of Transition Belsize’s foraging group for the last year. We have been carefully trained to identify edible and poisonous plants and how to forage sustainably without damaging the local environment. 

My four-year-old son and I have learnt a great deal about how to produce delicious and free food out of plants that most people regard as weeds. 

Our recent successes include nettle pesto, Japanese knotweed crumble, and hedgerow jam.
